Cucumber Egg Topping
1 fresh firm cucumber
3 eggs
2 tbsp mayonnaise
dash of pepper
1) Boil the eggs gently over a small flame for 10 minutes.
2) Cool them before shelling.
3) Reserve 2 whole hardboiled eggs. Remove egg yolk from one egg and reserve the hardboiled white.
4) Smashed the eggs with a fork in a container until they are small pieces.
5) Skin the cucumber and remove the seeds in the middle.
6) Dice the cucumber into small pieces.
7) Mix well the cucumber with the smashed eggs, mayonnaise and pepper.
8) Cover and refrigerate, best 4 hours or more. (You can prepare the night before)
9) Serve cold on biscuits or bread (toasted or fresh).
Mayonnaise Chicken
1 fresh firm cucumber
1 chicken breast or any lean chicken meat (you can use leftover chicken meat)
2 tbsp mayonnaise
dash of pepper
1) Shred the chicken into small pieces or chop them into small pieces. Place them in a container.
2) Skin the cucumber and remove the seeds in the middle.
3) Dice the cucumber into small pieces.
4) Mix well the cucumber with the shredded chicken, mayonnaise and pepper.
5) Cover and refrigerate, best 4 hours or more. (You can prepare the night before)
6) Serve cold on biscuits or bread (toasted or fresh).
Mayonnaise Ham
1 fresh firm cucumber
100g lean honey baked ham
2 tbsp mayonnaise
dash of pepper
1) Cut the ham into small pieces. Place them in a container.
2) Skin the cucumber and remove the seeds in the middle.
3) Dice the cucumber into small pieces.
4) Mix well the cucumber with the diced ham, mayonnaise and pepper.
5) Cover and refrigerate, best 2 hours or more. (You can prepare the night before)
6) Serve cold on biscuits or bread (toasted or fresh).
Cucumber Tomato Topping
1 fresh firm cucumber
4 fresh medium sized ripe tomatoes
3 tbsp mayonnaise
dash of pepper
1) Deseed the tomatoes (if you wish) and dice them. Place them in a container.
2) Skin the cucumber and remove the seeds in the middle.
3) Dice the cucumber into small pieces.
4) Mix well the cucumber with the diced tomatoes, mayonnaise and pepper.
5) Cover and refrigerate, best 2 hours or more. (You can prepare the night before)
6) Serve cold on biscuits or bread (toasted or fresh).

Sardine Topping
1 250g can Sardine (or mackerel)
2 medium onions or 6 shallots
1 fresh big red chilli
2 tbsp tomato sauce
1) Skin the onions and dice into tiny pieces.
2) Deseed the chilli and dice into tiny pieces.
3) Remove the bones from the sardines and break the sardines with a fork in a container into smaller pieces.
4) Add the onions, chilli and tomato to sardines and mix well.
5) Cover and refrigerate, best 1 hour or more. (You can prepare the night before)
6) Serve cold on biscuits or bread (toasted or fresh).
Mayonnaise Tuna Topping
1 fresh firm cucumber
1 can water based tuna
2 tbsp mayonnaise
dash of pepper
1) Pour away the liquid. Shred the tuna into small pieces. Place them in a container.
2) Skin the cucumber and remove the seeds in the middle.
3) Dice the cucumber into small pieces.
4) Mix well the cucumber with the tuna, mayonnaise and pepper.
5) Cover and refrigerate, best 4 hours or more. (You can prepare the night before)
6) Serve cold on biscuits or bread (toasted or fresh).
Natural Peanut Butter Topping
Use Natural Peanut Butter (you will be able to see a layer of peanut oil on top), as there is no trans fats.
Just top the peanut butter on your biscuit or toast and serve immediately.

2 pieces of square multi grain bread
2 pieces of low fat square cheese
1) Lay the cheese on top on the bread.
2) Place them on the tray and toast the cheese bread in a toaster oven for 1 minute until the cheese is bubbling and turns golden brown at the edges.
3) Serve when slightly cool.

With Butter and Garlic Salt
2 pieces of square multi grain bread
2 tsp butter
2 dashes of garlic salt
1) Spread the softened butter on the bread.
2) Sprinkle garlic salt over the butter.
3) Place them on the tray and toast the bread in a toaster oven for 1 minute until the toast turns golden brown.
4) Serve when slightly cool.

With Butter and Fresh Garlic and Italian Herbs
2 pieces of square multi grain bread
2 tsp butter
2 cloves of garlic, chopped finely
1/2 tsp italian herbs
1) Mix the chopped garlic and italian herbs with softened butter.
2) Spread the mixture on the bread.
3) Place them on the tray and toast the bread in a toaster oven for 1 minute until the toast turns golden brown.
4) Serve when slightly cool.
You may omit the herbs if you wish.
